‘Love Me’ Valentine’s Day Red Velvet Cream Cheese Frosted Cookies

Nothing says “I love you” more than homemade baked goods. So instead of Walmart chocolates, show you really care by baking these delicious Red Velvet Cookies with chewy white chocolate chunks.

Cookie Ingredients

 ½ cup room temperature unsalted butter (or one stick)  

¾ cup sugar

1 large egg

1-1 ½ tablespoons red food coloring (depending on how red you would like the cookies to be)

1 ½ cups all-purpose flour

3 tablespoons cocoa powder

½ teaspoon fine salt

½ teaspoon baking soda

2 tablespoons whole milk (or buttermilk if preferred)

3 oz. of white chocolate chunks, finely chopped

 

Royal icing Ingredients

8 oz. light cream cheese (at room temperature)

½ cup unsalted butter (at room temperature)

2 tbsp light sour cream (at room temperature)

2 Tbsp lemon juice

1 tsp pure vanilla sugar (icing sugar)

Start with setting your oven to 350 degrees and bring out 2 baking sheets and spray with cooking oil (or use parchment paper if you prefer) then with an electric mixer or whisk, mix the butter and sugar at medium speed until it becomes fluffy. After mixing for a few minutes, add your eggs and combine. Add your food coloring and vanilla and mix well until you get the red color you’d like. Bring out a separate bowl and add your dry ingredients, flour, cocoa powder, baking soda and salt. Once mixed, add your choice of milk and combine slowly. Pour about ½-¾ of your white chocolate and combine. Began shaping your dough into half dollar sized balls and sit about 1 ½ inches away from another. Bake for 12 minutes to get that perfect soft cookie, rotate the pans halfway through. Let them cool for 15 minutes. While you let them cool, we will make our cream cheese royal icing. In a bowl add and beat the cream cheese, sour cream and butter with a mixer or whisk. Add your lemon and vanilla extract and make sure to combine well. Add sugar a little at a time and mix until you get a smooth and creamy texture. If you want a glossier less dense texture don’t refrigerate, if you want a thicker texture sit it in the refrigerator for around 10 minutes or check until you get the texture you’d like.
