As I grew up, my grandma always cooked for me. Whether it was my birthday cake or just dinner at her house, she always made the best food. She has always been there for me by coming to my sports games and taking me shopping. She means the world to me, so am dedicating this article to her by using one of her many Homemade recipes that’s perfect for spring baking. You will love my Grandma Diana’s delicious Carrot Cake.

Ingredients :
4-5 cups grated carrots
1 cup brown sugar
4 eggs
1 cup White sugar
1 cup Oil
2 tbsp vanilla
1 cup crushed pineapple, drained
3 cups all- purpose flour
1 1/2 Tsp baking soda
1 Tsp salt
3 – 4 Tsp cinnamon (to taste)
1 cup walnuts or pecans
Cream cheese icing:
1 stick sweet cream butter
8oz cream cheese
2 – 3cups confectioner sugar (powder sugar)
2 Tsp vanilla

In a medium bowl, combine grated carrots, brown sugar, and let it set for 20 – 30 minutes. Then stir. Preheat oven to 350 degrees and grease your pan so it does not stick. In a large bowl, beat your eggs then add the white sugar, oil, and vanilla. Then add pineapples, flour, baking soda, salt, and cinnamon and mix until combined. After it is mixed, up add your carrot mixture and your nuts then pour into your pan. Bake for 40-50 minutes while checking on it with a toothpick to see how done it is. Let it cool for 20 minutes (or until it’s not hot) then move to making the cream cheese frosting.

Frosting:

In your mixer put your sweet cream butter and cream cheese and mix on low. Add vanilla and powdered sugar until smooth. Then add the icing to your cooled cake and add some extra pecans or walnuts. Happy Spring into Summer!
